Easy Rocky Road Recipe – Rocky Road is a combination of some of the best sweet ingredients. Marshmallow, chocolate and biscuits, what could be better? This recipe is really easy to follow and great to do with children.
Serves: 10 small-ish squares
Preparation: 30 minutes
No baking required, but it will need to be in the fridge for almost 2 hours before its ready.
Skill: Really easy, great to do with children
Tin required: 1 x 24cmx24cm/9.5inchx9.5inch square tin
125g/4.5oz soft unsalted butter
300g/10.5oz dark chocolate, broken into pieces
3 heaped tbsp golden syrup (as in don’t worry if its spilling over your spoon)
100g/3.5oz rich tea biscuits, broken into small biteseize pieces
100g/3.5oz mini marshmallows
For this recipe you won’t need to turn your oven on, or line a tin. I just use the tin without lining, or butter for greasing and cut the squares of Rocky Road straight from it.
Break your biscuits up into small bitesize pieces. Add them to your chocolate sauce in the saucepan and gently mix with a wooden spoon. Be careful at this stage as you don’t want to break the biscuits up too much more.
You will now need to leave your mixture on the side to cool for around 15 minutes. If you add the marshmallow too quickly, it will melt (this isn’t a bad thing, but it just doesn’t look as good!) This next bit needs to be done quite quickly but gently. Once the mixture has cooled slightly, add your marshmallows and very gently mix.
