Easy Mocha Cake Recipe

Easy Mocha Cake Recipe – This really is a delicious cake, and a combination of two of my favourite things, chocolate and coffee! Plus it is very simple to make. If you are not a fan of coffee (and the icing on this is very strong coffee) just use the chocolate cake frosting recipe on this website.

Serves: 12 smaller slices or 10 generous slices

Preparation: 15 minutes

Baking: 25-30 minutes

Skill: Easy

Tins required: 2 x 20cm/8inch sandwich tins

Ingredients :

50g/2oz cocoa powder

6 tbsp boiling water

3 large eggs

60ml/2fl oz milk

175g/6oz self-raising flour

1 rounded tsp baking powder

100g/4oz unsalted butter, softened, in fact, veru soft plus a little for greasing

275g/10oz caster sugar

Icing

300ml/0.5 pint double cream, whipped until spreadable (I had lots left so you can get away with less cream)

1 level tsp, instant coffee, dissolved in 2tsp boiling water, then left to go cold

Mocha Cake Ingredients

Method :

Preheat your oven to 180c/160c for fan/Gas mark 4. Grease and line 2 20cm/8inch cake tins.

Mocha Cake Recipe Method 1
Put the cocoa powder into a mixing bowl, add the boiling water and mix until well combined and a paste-like consistency.

Mocha Cake Recipe Method 2
Add the sugar to your cocoa mixture and mix well. It will now be very liquid.

Add the butter. Your butter must be very soft for it to be mixed in easily.

Now add all your remaining ingredients (self-raising flour, baking powder, eggs and milk) and mix well until combined.

Divide the cake mixture into your two tins. Your mixture will be very liquid, so I divided mine using a ladle, much easier and you can divide it really accurately.

Bake for 25-30 minutes, until the cakes begin to shrink away from the sides of their tins and when you insert a knife into the cake, it comes out clean.

Turn the cakes out of their tins immediately (be really careful, the tins and the cakes will be very hot) and leave to completely cool on a wire rack.

Mocha Cake Recipe Method 8
For the topping and filling, whip the double cream until it slightly stiffens, add your cold instant coffee and whip again until combined. I used an electric whisk here and it took a while, so be prepared for serious arm ache if you are doing it by hand.

Spread half the cream on the top of one cake, place the other cake on top and spread the remainder of the cream on the top of that.

And thats it, so simple and so delicious. I keep mine in the fridge to keep it fresh, and to keep the cream happy!
