Easy Madeira Loaf Cake Recipe – Madeira cake is a classic British cake. I grew up with my Granny and my Mum baking this fairly regularly, so it brings back lots of childhood memories for me. You will need to buy some citrus peel for this cake. I could not find this in any supermarkets, but I did find it in a whole food store. It isn’t like the chopped peel you would put in a fruit cake, its large strips of peel.
Serves: 8-10 slices
Preparation: 20 minutes
Baking: 1hr 15 minutes
Tin required: 1 x 2lb loaf tin
175g/6oz unsalted butter, softened, plus extra for greasing
175g/6oz caster sugar
finely grated rind of 1 lemon
3 medium eggs
140g/5oz self-raising flour
115g/4oz plain flour
2 tbsp full fat milk
1 tbsp lemon juice (this works out as 1 lemon, just use the same lemon as the one you have taken the rind from)
4 slices citrus peel
Preheat your oven to 160c (140c fan)/325f/gas mark 3. Grease using your extra butter and line a 2lb loaf tin.
Place the softened butter and caster sugar into a mixing bowl and beat until pale and fluffy.
Finely grate the rind of your lemon, add to your mixing bowl and combine with your butter/sugar mixture.
Add your eggs one at a time to your bowl, mixing well between each addition.
Once all three eggs have been added, use a spatula to scrape all the mixture from around the edge of the mixing bowl, back into the mixture.
Sift the 2 different flours into your mixture and gently mix until well combined. The mixture will be very thick.
Finally add your milk and mix well. And then add your lemon juice (take the juice from the lemon you grated earlier) and mix until well combined.
Pour your mixture into your prepared loaf tin and level with the spatula.
Place 4 slices of your citrus peel on top of the cake mixture.
Place in the oven for between 1 hour and 1 hour 15 minutes. Check the loaf after 1 hour, by inserting a knife or cake tester into the middle of the cake. If it comes out clean, its ready. Don’t worry if your citrus peel has sunk into the cake. Once the cake is cooked, remove it from the oven and place on a cooling rack.
After 15 minutes, gently remove the cake from the tin and allow to fully cool. And thats it. This is perfect to have with a cup of tea on a cold day! Enjoy!
