Easy Lemon Pound Cake Recipe – This is such a delicious and easy cake to bake. It is quite big so perfect for parties, and so moist, I think everyone will love it!
Serves: 16-20 slices
Preparation: 20 minutes
Baking: 55-60 minutes
Tin required: 1 x 10 inch pound tin (also known as a bundt tin or tube tin)
423g/15oz plain flour, plus extra for lining the tin
1 tblsp baking powder
0.75 tsp salt
603g/21oz sugar 2
50g/9oz unsalted butter, plus extra for greasing
5 medium eggs
6 tbsp lemon juice (approx 4 lemons)
zest of 1 lemon
Preheat your oven to 180c(160c fan)/350f/gas mark 4. Grease your pound cake tin with the extra butter and then over the top of the butter, sprinkle a thin layer of plain flour.
Place your butter and sugar into a mixing bowl and mix until well combined.
Add your eggs, one at a time and mix until well combined with the butter/sugar mixture.
In a separate bowl combine your dry ingredients (flour, baking powder, salt). Add approximately a third of this to your egg/butter/sugar mixture and combine, and then add approximately a third of your milk and combine again. Repeat this process until all the flour and milk are combined in your mixing bowl with the eggs/butter/sugar.
Finally add your lemon juice and zest, and mix until all the ingredients are combined.
Pour your cake mixture into the prepared tin.
Place in the oven for approximately 55 minutes. Insert a knife or tester to check whether its cooked all the way through. Once cooked, remove from the oven and leave to cool for about 15minutes before turning out of the tin onto a wire rack to cool completely.
