Easy French brioche Recipe

Ingredients (make 2 brioches):

  • 0.7oz (20g) of Boulanger’s yeast (ask your local French bakery for some “levure de Boulanger”), or 0.4 oz of dried yeast
  • 1/8 cup of milk
  • 1 egg
  • ½ tsp of salt
  • 21 oz (600g) of flour
  • 3.5 oz (100g) of sugar
  • 3.5 oz (100g) of butter
  • 1/8 cup of water
  • 2 tbsp of orange blossom
  • Greaseproof paper
  • Bitter orange marmalade or jam

Prepare the brioches pastry:

  1. In a bowl, dissolve the yeast into the lukewarm milk
  2. In another bowl, beat the egg with the salt
  3. In a big bowl, pour half of the flour, make a hole in the middle with a wooden spatula
  4. Pour into the hole: beaten egg + sugar + melted butter + water + dissolved yeast
  5. Combine all the ingredients progressively, starting from the center
  6. Add step by step some flour until the pastry is not sticky anymore to the fingers
  7. Stretch and knead the pastry with your hands (floured) during 5 minutes
  8. Make a ball and set aside for 2h in the bowl covered with a dish-towel on a warm place (ideally near a heater during winter)

Create the brioches:

  1. When the volume of pastry has doubled, stretch and knead it again with your floured hands during 5 minutes
  2. Make 2 balls of equal size
  3. Put some greaseproof paper onto the baking tray, flour it
  4. Stretch a little bit each ball of pastry and set them onto the baking tray
  5. Cover with dish-towel
  6. Leave aside for 2h again in a warm place

Other version:

  1. Separate each ball into 3 to make a braid
  2. Roll out on the floured table each ball with a rolling pin to make a rectangle of 3 inch x 16 inch approx.
  3. Put some greaseproof paper onto the baking tray, flour it
  4. Set the 3 rectangles onto it, seal them together with your fingers at one end
  5. Then braid the length of pastry
  6. Do the same with the other ball
  7. Cover with dish-towel
  8. Leave aside for 2h again in a warm place

Bake the brioches:

  1. Pre-heat the oven to 375 F (Gas mark 5) (190 C)
  2. When the volume of the brioches have doubled, brush the surface of each with a mixture of : egg yolk + sugar + water
  3. Bake into the oven for 30 minutes
  4. The brioches are ready when they are golden!

My tip 1: eat some slices of lukewarm brioche with some orange marmalade topping, along with a cup of coffee or tea …it’s delicious!

My tip 2: If you are getting short of time, you can prepare the pastry the afternoon before and bake them early in the morning for breakfast…
