Easy Coconut Cream Cake Recipe – This is really delicious and makes you feel quite tropical. The cake itself is very similar to a Victoria Sponge so very easy to bake. Coconut cream can be found in the Thai food section of a supermarket.

Baking: 20-25 minutes

Tins required: 2 x 20cm/8inch sandwich tins

Ingredients :

175g/6 oz unsalted butter, softened, plus extra for greasing

175g/6 oz caster sugar

3 medium eggs, beaten

175g/6 oz self-raising flour

1.5tsp baking powder

55g/2 oz desiccated coconut

2tbsp coconut cream

Frosting

100g/3.5oz unsalted butter, softened

3tbsp coconut cream

280g/10 oz icing sugar

5 tbsp pineapple jam (I had never heard of this! But there it was in the supermarket!)

Desiccated coconut to decorate

Easy Coconut Cream Cake Ingredients

Method :

Preheat the oven to 180c/350f/gas mark 4. Grease and line the bases of two 20cm/8inch sandwich tins.

Place the softened butter in a bowl with the caster sugar and beat together until combined.

Add your beaten eggs, a small amount at a time, mixing well inbetween each addition.

Once all the eggs were in, my mixture started to curdle (eggs separating from the butter/sugar mix) so I added a little flour, mixed it in and it was fine. Then add all your remaining flour and baking powder.

Then mix in the desiccated coconut and the 2 tablespoons of coconut cream, until well combined.

Divide the mixture between the prepared tins and smooth level.

Bake in the preheated oven for 20-25mins or until golden and coming away from thhe edge of the tin. Alternatively, check the cake is cooked by inserting a knife into the middle, if it comes out clean it is cooked.

Leave to cool in the tins for 3 minutes and then turn out to cool completely on a wire rack.

For the frosting, sift the icing sugar into a bowl and add the butter and coconut cream. Beat together until smooth.

Spread the pineapple jam over the top one of the cakes and then spread half the frosting on the bottom of the other half.

Place the cake with the frosting ontop of the jam spread cake, so that the frosting and jam are stuck to each other.

Finally, spread the remaining frosting on the top of the cake and sprinkle with some desiccated coconut.

And thats it! Delicious and makes you feel like you are holiday, in a cake way!
