Easy Choux pastry Recipe (Homemade)

Preparation: 35 minutes
Cooking time: 15-20 minutes

1 cup of water (1/4 l)
½ tsp of salt
1 tbsp of sugar
2.5 oz (75g) of butter
5 oz (150g) of flour
4 medium eggs
Greaseproof paper
Pre-heat the oven to 410 F (Gas mark 6) (210 C)

Prepare the pastry

  1. In a non-stick saucepan, mix the water + salt + sugar + butter
  2. Heat over medium heat until boiling
  3. Remove from heat and pour all the flour at once
  4. Mix vigorously with a wooden spatula, until the pastry is smooth and unsticks the saucepan
  5. Keep mixing and add one after the other each egg (wait complete combination of the egg before adding a new one)
  6. At the end, the pastry is soft but shouldn’t spread out

Create the choux

  1. Set a buttered greaseproof paper on a baking tray
  2. With the help of 2 teaspoons, create some small choux and set them onto the baking tray (leaving 1 inch space in between) (approx.. size: 1 inch)

Bake the choux

  1. Bake the choux into the oven for 15 minutes (20 minutes if your choux are bigger)
  2. They are ready when golden and puffy
  3. Don’t remove them from the oven until ready as they may go down
