Easy Bara Brith Recipe

Easy Bara Brith Recipe – This cake is so moist and full of fruit, you will not be able to stop eating it! This is a family recipe from my Welsh inlaws, it is a traditional Welsh fruit loaf with a bit of a twist. It is very easy to bake (only 5 ingredients) but you have to soak the fruit overnight so you should prepare a day in advance.

Serves: 10 good slices

Preparation: Overnight for soaking the fruit, then 10 minutes

Baking: 1hr 20 minutes

Tin required: 2lb loaf tin

Ingredients :

Small amount of butter for greasing your tin

350g/12oz dried mixed fruit or raisins

225g/8oz soft brown sugar

2 tea bags

300ml/0.5 pint boiling water

275g/10oz self raising flour

1 large egg, beaten

Method :

Preheat your oven to 150c/302f/gas mark 2. Grease and line the bottom of a 2lb loaf tin using greaseproof paper and butter. Place your tin onto a baking tray.

Into a measuring jug, pour 300ml/0.5 pint of boiling water and add your 2 tea bags. Mix them round so that they turn the water brown.

Place your dried fruit into a bowl with your sugar.

Now pour your strong tea into the bowl with the fruit and sugar. Leave this fruit overnight, so that it becomes juicy and plump. I stirred it a couple of times before going to bed as the sugar had sunk to the bottom.

The next day, add your self raising flour and beaten egg to your soaked fruit. Mix until well combined.

Pour the cake mixture into your prepared tin and place in the oven on its baking tray.

Bake for approximately 1 hour 20 minutes. Check the cake is ready by inserting a knife, if it comes out clean the cake is cooked. It may need a little longer but when its ready place on a cooling rack.

Allow it to cool for 10 minutes, then turn the cake out of the tin and remove the greaseproof paper.

Leave it to cool completely before slicing. I really recommend this cake, it is so delicious!
