Easy Banoffe Pie Recipe – This is such a delicious pie and so easy to make. I think everyone loves this and it is great to make with children as there is no baking involved. This classic combination of flavours cannot be beaten!

Tin required: For this I have used a 23cm pie dish
125g/4oz digestive biscuits, crushed
100g/3.5oz unsalted butter, melted
397g/14oz can of pre-made caramel
3 medium bananas
300ml/10fl oz double cream
1 heaped teaspoon drinking chocolate (for decoration)
Take your digestive biscuits, place in a plastic tub or bowl and using the end of a rolling pin, crush. You want to make sure there are no large pieces but that it is not crushed to a powder as this will be a strange texture.
Place your unsalted butter in a bowl and melt, I used a microwave for this.
Pour your melted butter into your crushed biscuits and mix until they are well combined.
Pour the biscuit mixture into your pie dish.
Using the back of a metal dessert spoon, or your hand, push the biscuits into the base and sides of the dish until it is covered. Now place your pie dish in the fridge for at least 20 minutes.
In the mean time, pour your caramel out of the tin, into a bowl and stir. Its a good idea to do this because the caramel can be a bit solid straight from the tin and you need to be able to spread it over the base easily. Once the base has been in the fridge for at least 20 minutes, take it out and gently pour the caramel on top.
Using the back of a metal spoon, gently spread the caramel across the biscuit base.
Take the bananas and chop each one into roughly 1-2cm slices.
Place the banana pieces on top of the caramel, making sure the caramel is fully and evenly covered.
Pour your cream into a mixing bowl and whisk until thick. You can do this by hand but it does take a while!
Spread your cream over the top of the bananas. You have to be quite gentle when spreading the cream over the bananas as it can pull them out of the caramel. I would use a metal spoon to spread it.
Finally, sprinkle some drinking chocolate over the top of the cream. This is optional but it is a nice extra if you fancy it.
And thats it, place the dish in the fridge until you are ready to serve. Enjoy!
